I haven’t been to an in person Guide meeting in nearly a year. I’m missing the noise, the messiness, the excitement, the campfires… the s’mores! I find an excuse most terms to have a s’more – even if they’re made using a tea tealight. This coupled with the fact I have a tonne of leftover marshmallows from a recipe testing session a while back meant I had a good excuse to create a little homage to my missed Girl Guide meetings.
Makes 12-18, Pre-heat oven to 160C
Ingredients
- 110g butter (softened)
- 100g caster sugar
- 100g soft dark brown sugar
- 1 egg
- 1 tsp vanilla
- 140g plain flour
- 55g cocoa
- 0.5 tsp bicarbonate of soda
- 0.5 tsp baking powder
- A pinch of salt
- 55g digestive biscuits
- 140g chocolate chips (I used a mixture of milk and white)
- 12-18 big marshmallows
Recipe
- Cream the softened butter with the sugars and add the vanilla essence. Mix in the egg.
- Sift together the flour, cocoa, salt, bicarb and baking powder. Half stir into the butter and sugar mix.
- Break up the digestives (save one), add to the cookie mix with the chocolate chips.
- Either, roll into a log, wrap in baking paper and place in the fridge to set up, then slice into 12. Or roll cookie dough into 12 balls and flatten.
- Place spaced apart on a lined baking sheet (you might need two sheets or cook in batches).
- Crumble the remaining digestive and sprinkle over the cookies. Slice marshmallows in half and place two halves on each cookie.
- Bake into the oven for 12mins. Cookies should be soft when taken from the oven, they will set up quickly.
- Remove, place on a wire rack and allow to cool.
- Eat.
