S’more Cookies

I haven’t been to an in person Guide meeting in nearly a year. I’m missing the noise, the messiness, the excitement, the campfires… the s’mores! I find an excuse most terms to have a s’more – even if they’re made using a tea tealight. This coupled with the fact I have a tonne of leftover marshmallows from a recipe testing session a while back meant I had a good excuse to create a little homage to my missed Girl Guide meetings.

Makes 12-18, Pre-heat oven to 160C

Ingredients

  • 110g butter (softened)
  • 100g caster sugar
  • 100g soft dark brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 140g plain flour
  • 55g cocoa
  • 0.5 tsp bicarbonate of soda
  • 0.5 tsp baking powder
  • A pinch of salt
  • 55g digestive biscuits
  • 140g chocolate chips (I used a mixture of milk and white)
  • 12-18 big marshmallows

Recipe

  1. Cream the softened butter with the sugars and add the vanilla essence. Mix in the egg.
  2. Sift together the flour, cocoa, salt, bicarb and baking powder. Half stir into the butter and sugar mix.
  3. Break up the digestives (save one), add to the cookie mix with the chocolate chips.
  4. Either, roll into a log, wrap in baking paper and place in the fridge to set up, then slice into 12. Or roll cookie dough into 12 balls and flatten.
  5. Place spaced apart on a lined baking sheet (you might need two sheets or cook in batches).
  6. Crumble the remaining digestive and sprinkle over the cookies. Slice marshmallows in half and place two halves on each cookie.
  7. Bake into the oven for 12mins. Cookies should be soft when taken from the oven, they will set up quickly.
  8. Remove, place on a wire rack and allow to cool.
  9. Eat.
